Ingredients

  • 37.5 g of Ripe Bananas (sliced)
  • 24.25 g of Cane Sugar
  • 28.75 g of Water
  • 0.25 Splash of Vanilla Extract
  • 0.25 pinch of Salt (to enhance flavor)
  • 6 oz Sparkling Water
  • Soda maker (any kind!)

Instructions

Step 1

In a medium saucepan, mix the sliced bananas, sugar, water, and if using, vanilla extract and salt. Bring the mixture to a simmer over medium heat, then lower the heat and let it simmer gently for 15-20 minutes, stirring occasionally. The mixture should thicken slightly as the bananas become very soft.

Step 2

Remove from heat and strain the mixture through a fine-mesh sieve to separate the liquid from the solids. After straining, allow the syrup to cool to room temperature, then refrigerate until cold.

Step 3

To make your Banana Soda, pour 2 oz of banana syrup over a glass with ice and pour 6 oz of sparkling water to top it off. Garnish with some banana slices, and enjoy!
