Step 1

To begin your recipe, add your raspberries, sugar, and water to a small pot and bring to a boil. Allow this to then simmer for up to 15 mins or until the raspberries are mushy, falling apart, and pale in color.

Step 2

Once your mixture has cooled down, remove it from the stove and filter through a colander or cheesecloth for a finer syrup. Funnel your raspberry syrup into a sealed container and store in the fridge for up to 1 month.

Step 3

To make your Raspberry Lime Rickey, add 3 tablespoons of raspberry syrup and 2 tablespoons of lime juice in a tall glass filled with ice. Finally, top it off with 6 to 8 ounces of sparkling water. Note: We recommend homemade sparkling water as it pairs best when there are no added minerals or flavors found in common club sodas or flavored seltzers from the store.

    Can You Make It Alcoholic?

    Of course! Almost any drink can always be tweaked to add alcohol. To make a Raspberry Lime Rickey alcoholic, add 2 ounces of your favorite vodka or gin to your glass after your lime juice. You'll then want to stir the glass a little bit to mix your ingredients together before topping it with your homemade sparkling water. And there you have it! You've now made yourself a Raspberry Lime Rickey Cocktail. Enjoy responsibly!

    Can You Use Other Fruits?

    If you want to get creative and use other fruits for your Rickey, go right ahead! Some popular options are strawberries, watermelon, blueberries, or even mango. Get as creative as you'd like with this recipe and make it yours. Depending on the fruit of choice though, we do recommend subbing your citrus for lemon for a better pairing. To each their own!

    Absolutely! To make a large pitcher of your Raspberry Lime Rickey, simply add 1 cup of your raspberry syrup, 3/4 cup of lime juice, and 48 ounces of homemade sparkling water to a large serving pitcher and lightly mix together.

    What's The History Behind Raspberry Lime Rickeys?

    Raspberry Lime Rickeys have been a staple on the east coast since the late 19th century. During the Civil War, Colonel Joseph Rickey moved to Washington D.C. to become a lobbyist. Due to his expertise in governmental affairs, he made friends with politicians and often met them for drinks in local bars. He regularly ordered a drink made with bourbon or whiskey, seltzer water, lemon, and ice. Because of his frequent orders, the drink became known as the "Joe Rickey" in the 1800s among bartenders and bar-goers.

    When the prohibition hit, the growing "Joe Rickey" became illegal as did every alcoholic beverage men and women enjoyed. This, however, did not stop this beverage from being adapted and consumed. Many found this beverage tasted just as good without alcohol and so forth birthed the mocktail version. Replacing the lemon juice with lime made this drink a refreshing twist on a once-classic. New Yorkers developed this drink further by using cherry syrup and New Englander's raspberry syrup. Its "Joe Rickey" name evolved into the well-known Raspberry Lime Rickey that many families around New England thoroughly enjoy and always have around during the hot summer season.
